Homemade Strawberry Shortcake

So, as I mentioned in my last post, Kristen and I made Strawberry Shortcake from scratch this weekend! Kristen found a good recipe on the internet, that can be seen here

It was pretty easy to make and turned out really well, but some of the shortcake wouldn't cook right, even though we kept it in the oven for 5 minutes longer than recommended. 


Here's what you need. 

Ingredients: 


  •  1 and a half lbs. Strawberries 
  • 6 tablespoons Sugar 
  • 2 cups Flour 
  • 2 teaspoons Baking Powder 
  • 1/4 teaspoon Baking Soda 
  • 3/4 teaspoon Salt 
  • 1 and a half cups Heavy Whipping Cream 
  • 1 tub Cool Whip 
Directions: 

Cut your strawberries into quarters (using your awesome GT cutting board, of course). 
Mix strawberries with 3 Tbsp. sugar and place in the refrigerator to chill for 30 minutes. 


Preheat the oven to 400 degree. 

Mix together flour, baking powder, baking soda, remaining sugar, salt, and heavy whipping cream until just combined. Place mixture into an ungreased 8 inch square pan. Bake until golden, 18 to 20 minutes. We kept our shortcake in the oven for 24 minutes and it still wasn't quite done in the center. 


Remove shortcake from the oven and cut into pieces. Place pieces of shortcake onto a plate and top with strawberry mixture and whipped cream. Enjoy! 

Kristen and I bought chocolate chips to melt down and drizzle over top of our shortcake, but didn't end up doing so because we just wanted to dig in!
